DINNER: Quinoa-lentil pilaf and steamed broccoli

Today was a horribly busy day at work, so I don’t have too much to report on. However, I wanted to at least give you an update.
I keep chickening out, and still haven’t tried the mashed chickpeas for breakfast yet. Maybe tomorrow??? Although the soup wasn’t the best for dinner last night, I actually enjoyed it more for lunch today. I wonder if it tastes better if it has a chance to marinate the flavors together more. I knew dinner was going to be late, so I ate snack appropriately, and timed it well. It was left over steamed veggies.
Elliott (my daughter) had a school presentation tonight about politics. She had to create a political party, and she ran for President of the U.S.A. She held the debate last night, and was excellent! She amazes me so much. Most kids are skipping school and suffering from major senior-it is right now, but not her! She is taking on extra credit (for fun), developing political campaigns, and volunteered to teach her entire mythology class for TWO classes. I admire her so much, and love her work ethic.
After her debate, we walked around some of the other school projects that were happening that night, which included a food cart exhibit. They used food to study chemistry, and then studied business marketing to come up with a business pitch. Last night they were giving samples of their food items away. Of course, my kiddos wanted to go!
The temptation was HORRIBLE. The food smelled so good, and people all around were eating. There were crepes, quiches, cheesecake, homemade pretzels, ice cream, etc.. It was overwhelming. I am glad to say I did not eat a single thing (even the jalapeno popper cheesecake that my sister said was excellent).
We got home super late, and then I had to make dinner. We didn’t end up eating until 10:00am, and it was just Cory and I (I had packed the younger kids dinner, and they eat everything at the food cart. Elliott had brought her own food to school). The pilaf was kind of bland, so I added liquid aminos to it. That helped, but it was not my favorite meal at all. Not bad tasting, just bland.
Now it’s off to bed, as I have a VERY early morning (and long day) ahead of me.
